Mid October, the GlycoSpot team went to the International Congress for the Brewing and Beverage Industry in Berlin. We are helping malt houses and breweries to analyze their endogenous enzyme activities.
Enzymes play an important role in the beer industry, from raw cereal grains and malt to the final product. In the malting process, the goal is to convert as much starch as possible into fermentable sugars. Enzymes are key players in this conversion and knowledge about the enzymatic composition of your raw material will ease the production process.
